Tumeric Quinoa and more...

We had a nourishing feast for dinner tonight. owen was asking for green juice all day so i had to make another batch for dinner!!

we started with a fresh arugula and herb salad with slices of cucumber and dressing of lemon juice and udo's choice oil. i always munch on raw veggies while i'm preparing everything else. we ate our feast outside in the cool but sunny late afternoon!!

then on to the quinoa dish!! amounts are approximate so experiment and change to your taste!!



1 cup cooked quinoa
1/2 cup lightly steamed peas
2 tbsps scallions
2 tbsps diced red onion
1/2 avocado- chunks
lots of black pepper
2 tbsps chopped parsley
2 tbsps chopped cilantro
1 tsp tumeric (or more to taste)
1/2 tsp cumin
sea salt to taste
1 tsp udo's choice oil or flax oil
*optional- add 1/4 cup edemame
*optional- add 1/4-1/2 cup sprouted organic non-gmo tofu (you can get at moms)

Remember when you eat cooked food always eat raw food with it so the enzymes from the raw foods help digest the cooked food (which has no enzymes).

my thoughts on soy products: i do not believe we should consume soy products on a regular daily basis. if you choose to consume some soy products be sure they are non-gmo organic. i may use a box of sprouted non-gmo organic tofu once a month. it is a fresh change occasionally. my boys love edemame in the pod so i just made sure to use organic non-gmo.
